Chill a champagne flute in the freezer for a few minutes, or fill it with ice water then discard.

Pour the fresh orange juice into the flute first — this is the Buck's Fizz ratio, heavier on the OJ than a Mimosa.

Slowly top with well-chilled Champagne or sparkling wine, pouring down the side of the glass to preserve the bubbles.

Do not stir. Serve immediately.
